The 2007 Evidence Cab. was barrel aged for 26 months with new French Oak, medium + toast.
This is a BIG wine with a little price. Our Cab grapes were harvested from elevated vineyards atop the Mayacaymus Mountain Range in Knights Valley. This Bordeaux style blend has soft forward fruit notes that melt into a smoky deep mid-pallet. A round, tannic, tobacco structure drifts long and true through this wine and enters the back end with a visceral earthy finish. This is a BIG WINE with structure that will bottle age well or can be decanted and enjoyed with a rich juicy meal now. Cheers !
