My goal with this mead was to not overpower the raspberry or honey with the heat of the pepper. I was going for “a little sweet, and a little heat”. I think we nailed it. This mead was made with 2 lbs. of raspberries in each gallon, then aged on smokey red chipotle peppers that add a great aroma and flavor to the mead without giving it an overpowering heat. The heat creeps up on you but never passes the “this is too much for me” levels. Of course, if you’re extremely sensitive to peppers, then stay away from this one. I’ll keep it all to myself. :)
