The 2007 Le Vol des Anges is certainly one of the greatest dessert wines we have ever produced at Bonny Doon vineyard. botrytis, when it is good, is very, very good (i.e., it imparts a rather distinctive quality to sweet wine – an incredibly rich, unctuous, honeyed, savory mouthfeel with great persistence on the palate). This wine has a wonderfully decadent, autumnal quality and one is mostly reminded of pomme – pears and quince, but it also suggests white nectarine, apricot and even a hint of blood orange. In one of those odd synchronicities that seem to be the warp and woof of the Bonny Doon experience, there is also an unmistakable and extremely attractive beeswax fragrance.
Vintage Notes
By happy chance more than by design, the Beeswax Vineyard, located at the very mouth of the Arroyo Seco in the Salinas Valley of Monterey County, gifted us with a second year of botrytised roussanne fruit in 2007. An unseasonably dry year, with lower humidity and fewer rain showers than 2006, we were delighted to harvest sufficient botrytised fruit, in such inhospitable conditions for the noble rot, to produce the 2007 vintage of wildly fermented Le Vol des Anges. In the vineyard, only the most botrytised fruit was selected in multiple picking passes. The fruit was hand sorted at the winery, prior to tender foot stomping and several hours of maceration pelliculaire, to soak up the sugar and flavors from the desiccated grapes. The fruit was then gently pressed to a juice of 32⁰ brix before being allowed to undergo fermentation on its own indigenous yeast. Approximately 70% of the wine was fermented in stainless steel and the balance in acacia barrels. After blending and resting, the wine was sterile filtered before bottling.
