Brooklyn Oenology (EN-ology, or simply ‘BOE’), is a local, woman-owned winery based in Williamsburg, Brooklyn founded by winemaker Alie Shaper in 2006. Brooklyn Oenology works to present the flavor of our region by sourcing grapes exclusively from local New York State vineyards and by displaying the exciting work of New York City artists on our labels. BOE works with New York City restaurants, markets, food producers and art organizations and has become an exciting part of our urban art and culinary scene.

BOE 2010 Cabernet Franc Rose

Style:
With the profile of a classic French Loire-Valley dry rose, this wine presents a beautiful balance of fruit flavors, refreshing acidity, and a clean, crisp finish. On the palate you get bright red fruits of cherry, watermelon, lime and strawberry which continue to a crisp, dry finish of minerals, white flowers and savory herbs.

Pairing Suggestions:
The balance of fruit and acidity in this wine lends itself to a wide variety of food pairings – from goat cheese, bbq or pizza, to sushi, salmon or tuna, or even chicken, turkey and ham, this wine can do it all, year round. And don’t forget the spring / fall Holidays, where it’s a perfect, festive fit!

100% Cabernet Franc (single vineyard)

Region:
Finger Lakes, NY (Seneca Lake)

Process:
First the grapes were crushed and cold soaked for 22 hours. The lot was co-fermented with two different yeasts consuming different sugars to different levels, balancing acidity while maintaining a crisp dry character to the wine. After the cool-temperature fermentation, it rested on a small amount of lees for a few weeks to extract extra aromas to give the wine its prolonged finish. It was then simply rested and bottled. Vegan.

Vintage:
Growers in the Finger Lakes in were ecstatic about an excellent growing season in 2010 that was both warm and dry, bringing out beautiful fruit flavors. Late ripening Cabernet Franc was allowed to ripen fully.
