The 2007 Estate Cabernet Sauvignon is showing its true color—intense inky red! I hear tasting room visitors commenting on the color when it’s first poured into their glass. Well, color is not a problem if you know how to get it. The Estate Cab is from two different clones—clone 4 and clone 337. I have planted both on our estate property near the front entrance. Both clones offer small berry size and small, lightweight clusters, about the size of your fist. Clonal selection is only half the battle, and then you need to ferment at cooler temperatures and use Delestage, which is a method to really improve and promote good color extraction.
