Primitivo is, according to DNA testing, the same as Zinfandel. This wine, while having similar aromas and body of Zinfandel, seems to me to have a completely different acid balance. I think the acid has more tannin in it than Zinfandel. 2007 was a good year in general but Primitivo, as well as Zinfandel, had problems during bloom. Instead of having the typical 3 or 4 seeds in the berries, this Primitivo had 1 or, in some cases, no seeds. The grape ripens from the inside out. The seeds are, in a sense, the regulators of ripening. The berries without seeds ripen to full sugar very much ahead of the seeded berries. We had to average the sugars of the two and let the seeded berries hang longer, which resulted in a very sweet must and eventually wine. This Primitivo has a good amount of sweetness but a great acidity to balance it. Those customers who loved our Chauvet Zinfandel will like this wine. In fact I feel this wine has more complexity than the Chauvet zinfandels.

Dark color, fruity sweet nose and balancing acidity are what this wine is all about.

This Primitivo will match well with winter grade stews, spicy foods and strong aged cheeses, blue especially.
