A beautifully complex Cabernet Franc from the Wahluke Slope. Drink now through 2015. smooth as velvet yet medium bodied. One of the few red wines that you can pair with seafood or poultry.
Vintage Notes
The grapes from this wine come from Riverbend Vineyard in Mattawa, one of the warmest growing regions in the state. On this vineyard, the grapes ripen beautifully with rich, full flavors and naturally low acid, resulting in velvety smooth wines.
Dark cherry, currant, ground black pepper and subtle flavors of slate and cedar shaving open to a broad palate and a soft finish. This glides over the tongue like silk and pairs beautifully with seafood and poultry as well as heartier red meat dishes.
Fermentation Notes
The ’06 Cabernet Franc was harvested under optimum conditions with dry cool nights and warm days prevailing. The grapes were hand-picked in the morning, transported to the winery and crushed on that same day retaining 10% whole berries. Fermentation completed in 10 days in open-top macro bins with 3 punch downs per day. After primary fermentation the wine was settled in a tank for 48 hours then racked to oak barrels for aging and to complete secondary fermentation. No fining agents were employed.
