Vintage Notes
The 2006 growing season started slow and then accelerated during a dry hot July and August. Then things cooled off again giving the plants a break and lots of hang time. The Riesling developed beautifully and ripened to full potential
Fermentation Notes
Whole cluster press. Controlled temp. Slow fermentation in tanks. Sugar tests taken daily. Ferments up to 20 days. Ferments between 40-55 degrees (cold fermentation). Then brought down to 20 degrees to stop fermentation after desired sugar level is achieved
