Vintage Notes
The 2005 Vintage marks the results of our first vintage from the Weinbeau vineyard located on the Whaluke Slope. This cooler climate allows the berry flavors to gain on the vine resulting in a rich wine with a classic Cab Franc white pepper finish.
Fermentation Notes
- • Crushed and then put into fermentation tanks to cold soak for 2 days to allow color and flavor extraction.
- • Ferments in stainless steal tanks. Hand punched 3 times a day. Temperatures do not exceed 85 degrees Fahrenheit.
