Our Cabernet Sauvignon, from hand-harvested grapes grown in the Horse Heaven Hills and the Columbia Valley, blends the Weinbeau (35%), Dionysus (12%), Berghan (4%) and O’Brien Vineyards (4%). Careful fermenting and aging in small French and American oak barrels for 20 months creates a rich wine with layered complexity and supple tannins. Try this wine with red meats and aged cheeses.

Vintage Notes
This vintage introduces the fruit from new contracts with Sagemoor Farms. We selected the Dionysus and Weinbeau vinyards to blend with the lush berry flavors that come from the Coyote Canyon vineyards. Due to moderate temperatures during the summer and fall, the wines maintained integrity from the vineyard to the bottle making this a wine that impresses while young, but will age nicely.
Fermentation Notes
- • Crushed and then put into fermentation tanks to cold soak for 2 days to allow color and flavor extraction.
- • Ferments in stainless steal tanks. Hand punched 3 times a day. Temperatures do not exceed 85 degrees Fahrenheit.
