Vintage Notes
2006 was a rainy year which resulted in small berry size for plenty of varietal intensity. The ripening was a slow process as a cool weather pattern settled in the Northwest with occasional rain which deterred over-ripeness.
Fermentation Notes
- -Crushed and then put into small fermentation tanks to cold soak for 2 days to allow color and flavor extraction.
- -Hand punched 3 times a day. Temperatures do not exceed 85 degrees Fahrenheit.
- -Ferments 10-14 days
